Estuary was born from a single obsession: the delicate balance between bean and vessel. We partner directly with micro-lot farmers in Yirgacheffe and Huila, rotating profiles that challenge the palate without ever raising its voice.
We roast, bake, and serve under the same low ceiling. Nothing is outsourced. Nothing rushed.

18-Hour Slow Steep
Eighteen-hour steep, notes of cacao and fig. Filtered slow for clarity of expression.
Forty-two seats. Three long communal tables. One window that catches the eastern light from seven til ten.
